100g white fish cut into chunks
1 cup thinly sliced onion
1 tsp minced garlic
1 cup thinly sliced red pepper
3 cups thinly sliced zucchini
2 tbsp diced tomatoes
1/2 tsp lemon zest
1 tsp freshly chopped parsley
1 tsp freshly chopped dill
1/2 tsp salt
2 cups butter
Heat a large pan over medium-high heat. Add onion and garlic, cooking until garlic is browned.
Add in zucchini and red bell pepper, cooking until slightly softened.
Add tomatoes and cook for another couple of minutes. Add fish chunks and cook for 10 minutes.
Once the fish is cooked through, flake the fish chunks into small pieces.
Stir in lemon zest, parsley, dill, and salt.
Serve over butter lettuce leaves.
