Diet Shrimp and Tomato Kabobs

  • 100 g. Medium-Size Shrimp (Pre-cooked)
  • 7-8 Small Cherry Tomatoes
  • 1/8 tsp. Fine Salt
  • 1/8 tsp. Black Pepper
  • Lemon Wedges

Prepare this recipe by placing the shrimp and tomato pieces in a small bowl, top the mixture with the salt, pepper, and the juice of 1 lemon wedge. Toss until the spices are well distributed on the shrimp and tomatoes. Place the shrimp and tomato pieces on a wooden skewer, alternating between. Next, place the skewer over medium heat for 1-3 minutes per side, until browned. Serve with lemon wedges for squeezing the lemon juice over the shrimp for an extra kick of flavour for your meal!

 

 

Meaty Tomato Sauce

  • 1 Medium – Large Tomato (cut into chunks)
  • 1 tbsp of Water
  • 100 g. Lean Hamburger Meat (90% / 10% or leaner)
  • 1/4 tsp. Garlic Salt
  • 1/4 tsp. Onion Salt
  • 1/4 tsp. Basil
  • 1/4 tsp. Parsley

Prepare this recipe by placing tomato chunks into a small pan over medium heat with water. With a wooden spoon or spatula ‘smash’ the tomato into smaller and smaller pieces throughout the cooking process to help transform the whole tomato into a sauce consistency. This process takes about 5 to 10 mins depending on the juiciness of your tomato. In a separate non-stick skillet, brown the ground hamburger. With a wooden spoon or spatula ‘smash’ the tomato into smaller and smaller pieces throughout the cooking process. Once the meat is browned, add it to the tomato sauce, add spices. You may need to add more water to have the tomato sauce reach your desired consistency depending on the juiciness of your tomato.
